We have been buying our rolls and especially the legendary Backhausbrot (a type of bread baked in a traditional German bakery) from your bakery for over 50 years (including from two previous bakeries) – partly because you don't use baking mixes. Thank you so much for that. However, what we have been finding increasingly disappointing lately is that the Backhausbrot is often baked for too long (the bottom is often very black, slightly burnt, and the crust is therefore extremely hard – even our very sharp bread knives struggle to cut the slices on the breakfast board). "Our goal is to always distinguish ourselves from our competitors through uncompromising quality. It's not about producing as much as possible as quickly as possible, but rather about meeting the needs of our customers." Our suggestion would be to bake the Backhausbrot in two batches: one batch with a normal baking time and the other with an extended baking time.
